Basic Vegan Double Chocolate Cherry Cookie Recipe

Dark chocolate chunks and tart cherries embedded in a chewy chocolate cookie…what’s not to love?

Chewy, chocolatey, and everything a cookie should be. These double-chocolate cherry cookies will pair perfectly with your favorite latte.

Recipe for basic vegan double chocolate cherry cookies

Makes 24 cookies

Ingredients

  • ½ cup vegan butter
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 2 T soy milk
  • 1 cup flour
  • ⅔ cup cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup Enjoy Life chocolate chunks
  • ½ cup dried cherries

Directions

  1. Preheat oven to 350° F. 
  2. In a large bowl, cream the vegan butter and brown sugar together. 
  3. Mix the vanilla and soymilk into the butter and sugar.
  4. In a separate bowl, whisk the flour, cocoa powder, baking soda and salt.
  5. Add the flour mixture to the butter mixture and stir until well combined.
  6. Fold in the dried cherries and chocolate chunks.
  7. Roll dough into 1” balls and place them about 2” apart on a baking sheet.
  8. Bake for 10 minutes. 
  9. Transfer the cookies to a cooling rack with a metal spatula.
