Basic Vegan Double Chocolate Cherry Cookie Recipe
Dark chocolate chunks and tart cherries embedded in a chewy chocolate cookie…what’s not to love?
Chewy, chocolatey, and everything a cookie should be. These double-chocolate cherry cookies will pair perfectly with your favorite latte.

Makes 24 cookies
Ingredients
- ½ cup vegan butter
- ½ cup brown sugar
- 1 tsp vanilla extract
- 2 T soy milk
- 1 cup flour
- ⅔ cup cocoa powder
- 1 tsp baking soda
- ¼ tsp salt
- ½ cup Enjoy Life chocolate chunks
- ½ cup dried cherries
Directions
- Preheat oven to 350° F.
- In a large bowl, cream the vegan butter and brown sugar together.
- Mix the vanilla and soymilk into the butter and sugar.
- In a separate bowl, whisk the flour, cocoa powder, baking soda and salt.
- Add the flour mixture to the butter mixture and stir until well combined.
- Fold in the dried cherries and chocolate chunks.
- Roll dough into 1” balls and place them about 2” apart on a baking sheet.
- Bake for 10 minutes.
- Transfer the cookies to a cooling rack with a metal spatula.
