Who doesn’t love a soft batch chocolate chip cookie? This tried and true recipe always comes out perfectly. It uses only brown sugar, which makes the cookies extra soft. Eat some while they’re still warm so you get all that chewy, melty, chocolatey goodness.

Basic Vegan Soft Batch Chocolate Chip Cookies

Makes 24 cookies

Ingredients:

  • 1 cup (2 sticks) vegan butter
  • 1 1/2 cups brown sugar
  • 2 Tablespoons soy milk or oat milk
  • 2 cups unbleached, all-purpose flour
  • 2 Tablespoons cornstarch or tapioca flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 bag (12 oz) chocolate chips

Directions:

  1. Preheat the oven to 350ºF.
  2. Cream the butter and sugar together in a large bowl. Mix in soy or oat milk.
  3. Whisk the flour, cornstarch, baking soda and salt together in another bowl, then add to the butter and sugar and mix everything together.
  4. Fold in the chocolate chips.
  5. Roll into 1” balls and place the balls about 2” apart on a baking sheet.
  6. Bake for 8 minutes. Let cool slightly, then transfer to a cooling rack.
