
Here’s another classic vegan sandwich for your lunchbox rotation. You can use any flavor of hummus you like, whether it’s roasted red pepper or “everything bagel” or a classic lemon-garlic. The apple adds a little sweetness and some extra crunch, and the sprouts are full of vitamins and phytonutrients. So it’s both tasty AND good for you.
Basic Vegan Hummus Sandwich
(makes 1 sandwich)
Ingredients:
- 2 slices of bread
- 2 (or more) Tablespoons of hummus
- 1/2 apple, sliced
- 1/4 cup sprouts or microgreens
Instructions:
- Toast bread if desired.
- Spread hummus on both slices.
- Top with apple slices and sprouts.
- Cut in half diagonally.
