Basic vegan lunchmeat sandwich: Tofurky, mayo, mustard, lettuce, and pickles on white bread.

This sandwich is a super nostalgic one for me…

When I was a kid, my grandpa used to make me pickle-and-bologna sandwiches on white bread with mayo, and I thought they were the best sandwiches ever. I also spent a lot of time playing The Sims 2 back then, so making lunchmeat sandwiches brings up fond memories in general.

This is my slightly more grown-up vegan version of lunchmeat sandwiches. (I added some mustard and lettuce.)

Ingredients for the basic vegan lunchmeat sandwich recipe

Basic Vegan Lunchmeat Sandwich

Ingredients:

  • 2 slices of vegan bread (I like Dave’s Killer White)
  • Vegan mayonnaise (like Follow Your Heart)
  • Dijon, spicy, or yellow mustard
  • Dill pickle slices
  • 5 slices Tofurky lunchmeat (see note)
  • 1 leaf green lettuce

Instructions:

  1. Spread mayo and mustard on the bread.
  2. Top with lunchmeat, pickles, and lettuce.
  3. Put the second slice of bread on top and slice in half diagonally.

(Some people do not slice their sandwiches on the diagonal. That is incorrect. Always slice diagonally using a serrated knife.)

Note: What I would do without Tofurky, I don’t know. They make the best vegan lunch meats, hands down. Their hickory-smoked and peppered varieties are my personal favorites. There are other vegan lunch meat brands out there, like Yves and Upton’s. I just prefer Tofurky.
