
This sandwich is a super nostalgic one for me…
When I was a kid, my grandpa used to make me pickle-and-bologna sandwiches on white bread with mayo, and I thought they were the best sandwiches ever. I also spent a lot of time playing The Sims 2 back then, so making lunchmeat sandwiches brings up fond memories in general.
This is my slightly more grown-up vegan version of lunchmeat sandwiches. (I added some mustard and lettuce.)

Basic Vegan Lunchmeat Sandwich
Ingredients:
- 2 slices of vegan bread (I like Dave’s Killer White)
- Vegan mayonnaise (like Follow Your Heart)
- Dijon, spicy, or yellow mustard
- Dill pickle slices
- 5 slices Tofurky lunchmeat (see note)
- 1 leaf green lettuce
Instructions:
- Spread mayo and mustard on the bread.
- Top with lunchmeat, pickles, and lettuce.
- Put the second slice of bread on top and slice in half diagonally.
(Some people do not slice their sandwiches on the diagonal. That is incorrect. Always slice diagonally using a serrated knife.)
Note: What I would do without Tofurky, I don’t know. They make the best vegan lunch meats, hands down. Their hickory-smoked and peppered varieties are my personal favorites. There are other vegan lunch meat brands out there, like Yves and Upton’s. I just prefer Tofurky.
