This easy, one-pot meal will spice up your weeknight. All it takes is a little bit of chopping and a large skillet or pot with a lid. This recipe will feed about 6 people, or make leftovers for lunches later in the week.

Depending on how spicy your Cajun seasoning is, and how spicy you like your rice, you can use more or less according to your taste.

Basic Vegan Sausage Jambalaya

Serves 4-6

Time: 15 minutes prep, 30 – 45 minutes cooking

Ingredients

  • 3 tablespoons oil, for frying
  • 1 yellow onion
  • 1 red bell pepper
  • 4 celery stalks
  • 4 carrots
  • 3 Tofurky sausages
  • 1 tablespoon Cajun seasoning
  • 3 cups vegetable broth
  • 1 cup white rice
  • 1 teaspoon salt
  • dash liquid smoke

Instructions

  1. Chop the veggies and slice the sausages. Heat the oil in a large, deep skillet.
  2. Sauté the veggies until tender, then add the sausage and sauté for a few more minutes.
  3. Add the vegetable broth, liquid smoke, rice, Cajun seasoning, and salt. Stir.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 30 – 45 minutes, or until rice is done.
