Brown bananas happen. When they do, make them into banana bread. Honestly, the riper your bananas get, the better banana bread they’ll make. This basic vegan banana bread recipe will magically transform your brown bananas into a delicious treat.
Spread with butter and enjoy with coffee or tea for breakfast or an afternoon snack. Take it to the next level by adding chocolate chips or chopped nuts. Just fold them in to the batter once it’s mixed.

Basic Vegan Banana Bread
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 teaspoon nutmeg
- 2 tsp ground flax seed
- 3 ripe bananas
- 3/4 cup maple syrup
- 3/4 cup soymilk
- 1/4 cup vegetable oil
Directions:
- Pre-heat the oven to 350º F.
- Mash the bananas in a bowl. Add the flax seed, soy milk, maple syrup and vegetable oil. Whisk well and set aside.
- Whisk the flour, baking soda, salt, and nutmeg together in a large bowl. The pour in the banana mixture and fold everything together with a spoon or rubber spatula. Do not over-mix.
- Oil a bread pan and pour in the batter. Bake for 1 hour, or until a toothpick comes out clean. (See note below.)
- Remove from oven and rest on a wire cooling rack. When the bread pan is cool enough to touch, turn the loaf out on to a cutting board. Let the bread cool completely before slicing.

Note: Baking time will depend on the size of your bananas. If you used large bananas, you’ll need a full 60 minutes of bake time. If the bananas were on the small side, check your loaf after 50 minutes. Poke it with a toothpick, and if the toothpick isn’t sticky, take the loaf out to cool.
