Meet tofu scramble, your basic breakfast and the first thing every vegan learns to do with tofu. Serve with toast and jam, or basic biscuits, or roll it into a breakfast burrito. Tofu scramble is easy to make and ready to eat in less than 20 minutes.
Basic Tofu Scramble
Serves 2
Ingredients:
- 1 block (10 oz) extra-firm tofu (or firm or super firm)
- 1 small onion
- 2 jalapeño peppers (or 1 bell pepper)
- 1 handful of cherry tomatoes
- oil for frying
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground turmeric
- salt & pepper to taste
- 1/4 teaspoon smoked paprika (optional)
- vegan cheese of choice (optional)
Directions:
- Dice the onion and the peppers. Slice the cherry tomatoes in halves or quarters.
- Heat some oil in a skillet over medium-low flame. Add the onions and peppers and stir. Sauté, stirring occasionally, until the onions are soft.
- While the onions and peppers cook, squeeze the water out of the tofu. My trick is to prick a few holes into the wrapper at the corners, and then just scrunch up the whole package over the sink to drain the water. You can also just take a fistful at a time and squeeze it by hand.
- Throw the tofu into the skillet with the onions and peppers and stir well. Season with garlic powder, turmeric, salt, and pepper. The turmeric makes the tofu turn yellow. Add some smoked paprika for flavor if you like. Stir until the tofu is coated in spices.
- When the tofu is warmed through, add the cherry tomatoes. Grate some vegan cheese on top or add some vegan cheese shreds if you have them. Stir everything together and serve immediately.
