Your basic breakfast, brunch, or breakfast for dinner. Anyone can make pancakes – all it takes is a skillet, a mixing bowl, and a few simple ingredients. For waffles, just sub a waffle iron in for the skillet. This recipe makes two large waffles or four small pancakes.
Pancakes for Two
Ingredients:
- 1 cup flour
- 2 T sugar
- 1 tsp baking powder
- pinch of salt
- 1 cup soy milk
- 2 T sunflower oil
- 1 tsp apple cider vinegar
- vegan butter (optional)
Directions:
- In a mixing bowl, whisk the flour, sugar, baking powder, and salt together.
- Stir the soy milk, oil, and apple cider vinegar together in a small bowl or pyrex measuring cup.
- Add the soy milk mixture to the flour mixture and stir with a spatula to make the pancake batter.
- Heat a skillet over medium flame.
- When the skillet is hot, brush with oil or vegan butter. Pour about 1/2 cup batter into the skillet.
- When bubbles form and pop in the center of the pancake, it’s time to flip. Cook for about half a minute on the other side, then transfer to a plate.
- Repeat until you have four pancakes. If you want to keep your pancakes warm, just put the oven on the lowest setting and transfer your pancakes to a plate in the oven when they’re done.

Waffles for Two
For waffles, follow steps 1-3 above. Heat a waffle maker, then pour in half the batter. Toast until steam stops coming out of the waffle maker. Repeat for the second waffle.
